FIXED TERM: JUNIOR SOUS CHEF (3 MONTH CONTRACT)

JUNIOR SOUS CHEF
The Junior Sous Chef will be part of the Boschendal Hospitality kitchen team. This individual will be responsible for cooking, supervising and presenting high quality food and dishes in the designated food sections as well as enhancing the overall efficiency of the hospitality restaurants. The ideal candidate will be highly organised, proactive, and capable of multitasking in an energetic environment.
KEY DUTIES AND RESPONSIBILITIES INCLUDES BUT ARE NOT LIMITED TO:
- Daily run to run of kitchen, opening and closing of the kitchen, making sure gas lines and equipment is off
- Daily ordering of Meat, poultry, vegetables, fruits and goods in line with our ethos, includes orders done from production side, gas orders. Request order numbers (add to a spreadsheet)
- Maintain low stock levels in the walk-in, dry store and consumables
- Check stock received, quality and if weights are correct
- Collaborating menus and dish ideas with the Chef, physically create a dish to taste and confirm
- Stock control e.g. Wastage, managing of fridges (includes sections)
- Stock takes of Food and OE, enter count sheets once a month and checking variances and reverting to the stock controller
- Work out recipes to set with the kitchen, on file
- Maintain good food hygiene, health and safety, FCS regulations
- Managerial kitchen staff and communicate to HR following Code of conduct.
- Monitor and submit staff clocking hours once a month and communicate, also control overtime
- Manage Weekly Staff Rosters & leave rosters
- Follow daily guests feedback and deliver guests needs.
- Report daily on any issues regarding guests complaints
- Report any broken equipment to outsourced services and any maintenance needed to the maintenance team
- Communicate any core issues in the kitchen
- Assist with the training of menus, dishes to Both FOH and BOH
- Comply with food standards
- Use kitchen equipment correctly and responsibly
- Keeping equipment hygienically in good condition
- Adhering to hygiene and health & safety standard
COMPETENCIES:
- Highly organised with excellent multitasking abilities.
- Work efficiently and manage time well between tasks.
- Strong verbal communication skills, with the ability to liaise effectively with various team members.
- Takes initiative and has a proactive approach in identifying and resolving issues efficiently.
- Attention to Detail.
- Ability to work collaboratively with different teams and departments.
EXPERIENCE:
- Minimum of 3 years cooking & kitchen environment experience
- Advanced knife skills experience
- Working with specialised kitchen equipment
- Food safety standard knowledge and experience
- Working back & front of house
QUALIFICATION:
- Matric
- Qualification in Food & Beverage operations
- Food safety & hygiene certificate
- First aid & Firefighting certificate
