FOOD & BEVERAGE MANAGER
A Food and Beverage Manager with a unique combination of culinary knowledge and leadership skills. This role typically involves overseeing the entire food and beverage operation within a hospitality setting at Boschendal Farm in the restaurants, wine tasting and event venues, while leveraging the chef’s experience to ensure quality and consistency in food preparation and service. This combined skill set allows a Food and Beverage Manager to drive operational excellence within restaurants and kitchens.
KEY DUTIES AND RESPONSIBILITIES INCLUDE BUT ARE NOT LIMITED TO:
- Ensure that standard operating procedures have been implemented according to brand standards.
- Ensure Food and Beverage employees work in a supportive and flexible manner with other departments, in line with company values.
- Stay updated on local and global trends, developments, and regulations to effectively manage governance, legal, environmental, economic, and other risks in an increasingly complex environment.
- Monitor food and beverage products served throughout operations and actively strive for continuous improvement.
- Ensure Food and Beverage activities align with the respective company strategy.
- Assemble creative and innovative event attractions using internal capabilities or outsourcing to qualified vendors.
- Innovate by keeping offerings and equipment in line with and ahead of trends.
- Ensure all operational equipment is functional and well-maintained.
- Communicate inter-departmental requirements and function sheets effectively and promptly.
- Manage staff and handle HR-related issues.
- Implement and execute SOPs (Standard Operating Procedures) aligned with company values.
- Highlight opportunities to Exco members and relevant departments by seeking input and inspiration from stakeholders to generate ideas for new products, processes, and markets, resulting in competitive advantages.
- Address guest inquiries, complaints, and feedback to ensure customer satisfaction, utilizing a deep understanding of culinary preferences.
- Ensuring a smooth operation and quality presentation of special events, banquets, or catering services,
Staff Leadership:
- Training and motivating the team to maintain high standards of performance.
- Conducting performance evaluations and managing schedules.
- Train team members and ensure smooth coordination between departments.
- Oversee and assist with the recruitment and selection of Food and Beverage employees by following property guidelines and using a competency-based approach.
- Ensure punctuality and proper appearance of all Food and Beverage and Events employees, including wearing correct uniforms and maintaining high personal hygiene standards.
- Maximize team effectiveness by developing skills and providing appropriate training, coaching, and mentoring.
- Conduct Performance Development Discussions with outlet managers through weekly 1:1 session to support professional development goals.
- Ensure managers conduct similar weekly sessions with their employees.
- Verify ERS (Employee Rostering System) timesheet and monthly overtime costs
Quality Control:
- Ensure the food quality is consistently high by applying the chef’s experience in recipe development, presentation, and food safety standards.
- Monitoring food preparation to ensure consistency, presentation, and taste align with standards.
- Ensuring the highest level of cleanliness and safety within the kitchen.
- Ensure cleanliness and upkeep of all event spaces.
Financial Management:
- Manage budgets & control costs
- Maximize employee productivity using multi-skilling and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests.
- Ensure all offerings operate in line with maximizing profit while delivering on the brand promise.
- Analyse business performance to facilitate accurate and meaningful forecasting.
- Reduce waste and drive responsible consumption across outlets.
- Report back on post events reporting including profitability of events.
- Verify and oversee Stock management with the managers of each outlets
- Reduce wastage across the board driving of responsible usage across all areas
Administration & Customer Efficiency:
- Manage administration, ensuring accuracy and timeliness in processes such as availability controls, rate code accuracy, and waitlist monitoring.
- Ensure monthly tips are reconned and approved
- Support the F&B Duty Managers by controlling rates and maintaining rate parity across all distribution channels.
- Coordinate with the Maintenance Manager for efficient planning of preventative maintenance and inventory control.
Menu & Kitchen Management:
- Collaborate with chefs to create seasonal or special menus, incorporating current food trends while maintaining operational feasibility.
- Designing creative and innovative menus that align with the restaurant’s theme and market demands.
Technical Competencies (Essential / Preferred)
- Proficiency in Excel, Word, PMS, OTA’s, Dineplan, and experience with data analysis and revenue management systems. Demonstrable
- Experience with distribution management, online booking platforms, and revenue data mining tools.
- Familiarity with kitchen management software, POS systems, inventory management tools, and other culinary technologies.

- Capable of prioritizing multiple projects in a fast-paced environment, while maintaining a strategic focus on big-picture goals.

- A firm, direct, and self-assured individual who excels in managing and delegating tasks, while maintaining close follow-up for quality control.
- Ability to work long hours in a high-pressure, fast-paced environment.
Experience and Qualifications: Advantageous but not essential
- Advanced Diploma in Hospitality Management
- Minimum 5 years of experience in a similar role, with proven expertise in F&B management, team development, and in-depth knowledge of FOH procedures.
- Experience with Hospitality management systems and distribution channels is essential.
- Experience with budgeting, cost control, and financial analysis specific to food and beverage operations.
- Managing online platforms and booking channels.
- Training and developing teams, with a focus on driving revenue and enhancing customer service standards.
- Food safety & hygiene certificate
- Apprenticeships or mentorships under seasoned chefs.
- Experience in managing all aspects of kitchen operations, including inventory, ordering, food cost control, and budgeting.
